Recently, my dearest friend Jane, lost her father to Pancreatic Cancer. This card is for Jane and for those of you who have lost a parent.

Breakfast - One serving of fruit; then exercised. Afterwards, Quaker Puffed Wheat cereal and non-fat milk. I have to say that I preferred the Quaker brand over the Kashi brand.
AM Snack - Hot Apple with Cinnamon (from SS web site). I used a small, organic apple, which counts as two servings.
Lunch - Leftover salad from yesterday.
PM Snack - Slice of cheese.
Dinner - Lamb and Feta Burgers (SS web site) and Roasted Eggplant Relish For 4 (SS web site). Both of these recipes were fast and easy to prepare. However, I liked one much better than the other.
The addition of the feta cheese to the lamb was fabulous. Especially since I'm not a big lamb fan. I think the feta cheese gave the lamb a big punch in the arm, and I found myself enjoying every bitefull. My husband was equally impressed, and even said that he might go so far as to nominate the burgers as one of his top 5 favorites for the month.
On the other hand, the eggplant relish was a disappointment. Suzanne claimed, on the recipe, that even eggplant haters will be tricked because the combination of cumin and fresh mint makes this recipe delicious.
While I wouldn't go so far as to say it was bad, I don't think I'd make it again. For me, the mint didn't work. I like eggplant and I felt the mint overpowered the dish. In fact, my husband didn't want me to include it in his lunch tomorrow. So, I guess the 2 servings of leftovers are all mine. Maybe it will get better with age.
