Breakfast - Bacon; then I fried the eggs the Suzanne Somers way.  Drain off all but a tablespoon of the bacon grease.  Then, crack the eggs into the pan and season with salt and pepper.  Put the lid on for a couple minutes and you will have the most delicious eggs ... EVER!

AM Snack - A sliced tomato.

Lunch - Leftover Baked Italian Sausage and Crunchy Coleslaw from yesterday.  This was just as fabulous the second day ... and oh so satisfying.

PM Snack - Fruit smoothie.

Dinner - Flattened Chicken (from SS web site) and organic, canned green beans.

This unusual preparation was new for me and I wasn't sure if the chicken would cook thru, but it did!  The first step is asking your butcher to butterfly the chicken by slicing the backbone and removing the breast bone.  Then, lay it flat and season both sides with salt, pepper, paprika and fresh rosemary.

Next, heat EVOO in a large skillet.  Put the whole chicken in the pan and weight it down with a lid and a brick or heavy stone.  I used my cast iron skillet as the lid and placed my flour canister inside.

Then cook for 15 minutes; then flip the chicken.  Cook for another 12 minutes.  Finally, let is rest for 5-10 minutes.

This Tuscan style chicken was crispy and pretty easy to prepare.  However, we each ate either a leg or wing and because the meat was so compacted, it was hard to get it off the bone.  Tomorrow we'll finish off the rest, so it should be better because there's no bones to deal with.
